Is Parboiled Rice the Same as Sella? 5 Raw, Steam and Sella Rice Myths, Busted

Search for "steam rice vs parboiled" and every page tells you something different. Ask two sellers for sella and you may get one golden grain and one cream-coloured grain. You are not imagining it. Rice processing words are used loosely, and loose words get expensive on a bulk order.

Here are five common myths, and what the sources actually say.

Myth 1: Sella and parboiled rice are different products

Mostly no. Parboiling has three steps: soaking, steaming and drying, all done to the paddy before it is milled. "Sella," "converted" and "easy-cook" are all trade names for the result. If an offer says sella, assume the rice is parboiled.

Myth 2: Parboiled rice is already cooked

No. It is partly treated while still in the husk, so it still needs full cooking. What changes is the grain: parboiling makes it firmer, harder and glassier. Boil it for the same few minutes as raw rice and it will still be hard in the middle, so check the pack for the cooking time.

Myth 3: Golden sella is a different grain from white sella

Same process, different shade. Parboiled rice ranges from creamy white to golden, and the grain stays firm and separate when cooked. A 2024 study in the International Journal of Food Science and Technology found that parboiled rice got harder the longer it was steamed, up to the 16 minutes tested, because the starch gelatinised.

Parboiling also moves some vitamins, thiamine for one, from the bran into the grain before milling. So parboiled white rice keeps more of them than ordinary milled white rice.

Myth 4: "Steam rice" has one standard meaning

This is the costly one. It does not. One exporter describes steam passing through the paddy, then drying and milling. Other sellers say the husk comes off first and the grain is steamed afterwards. India's Food Corporation of India has said steamed rice is not raw rice, and that it differs from parboiled rice: soaked and steamed until the starch gelatinises, but without the drying step.

Three descriptions, one label. Ask the mill for its definition in writing, and paste that line into your contract.

Myth 5: Raw rice is just a lower grade

Raw rice is milled straight from dried paddy, with no soaking or steaming. It is softer and cooks fast, which suits some dishes better. It is a different product, not a worse one. Pick it when you want a soft, quick-cooking grain, and pick sella when the grain must hold its shape in a pot of biryani or a large catering batch.
